Sterilise everything. Brewing is simple, but you are working with things that need to stay clean to ensure the integrity of your beer. As soon as your beer starts to cool, you need to make sure that you are only working with it using sterile instruments. This period is one where your beer is vulnerable to different types of bacteria, as the fermentation has not properly started yet, so be careful!

The wort is the liquid that is produced after cooking the materials needed to make your beer, and it is first boiled, then cooled, leaving behind a sweet liquid that will go onto ferment into beer. Your wort should be cooled as quickly as possible. As mentioned above, this reduces the window through which your beer can pick up bacteria, and it will also help improve your beer’s taste and clarity.
